Dessert Recipe 2: Making Brown Sugar Boba

Today, we will be making our very own boba!!








Bubble tea have really taken over the world and almost everyone is into different type of bubble tea.


One of my favourite and a must order is Brown Sugar Milk. The sweetness of the brown sugar and the freshness, smooth of the milk, when both are mix together, they blend so well with each other. I would determine how good a bubble tea shop through their brown sugar milk. It is so easy to make yet, so many shops have not done so well in it.

Ingredients needed to make Brown Sugar Boba


The ingredients we need are very simply and can get it easily at major supermarkets. There are:



1.) 140 grams of Tapioca Flour (split into 2 different bowls, each holding 70 grams of Tapioca Flour)

2.) 1 bar of Gula Melaka (~ weight about 70 grams) / 70 grams of Brown Sugar

3.) 100 grams of Water


It is not really an ingredient, but it is good to have a spatula or a long spoon for mixing later. The mixture can really get very sticky, and the mixing have to be done in a short time, so that the dough can remain warm.


Steps to make Brown Sugar Boba



1.) Pour the 100 grams of water into a pot.


2.) Subsequently, add the gula melaka/ brown sugar into the pot. Make sure to cover the pot with the lid so as to reduce the water loss.


3.) If you are using gula melaka, when the water is boiling, remove the undissolved gula melaka. We will be using the undissolved gula melaka in the later part when we are making the Brown Sugar Milk.


4.) Allow the mixture to boil for another 1 minute and turn off the heat.


5.) Immediately pour the mixture into the 1st 70 grams of tapioca flour. Using the spatula, mix the flour and the mixture together and ensure that the flour is all mixed together.


6.) Add in the 2nd 70 grams of tapioca flour and mixture together. Continue mixing the mixture, till it is not sticky, and it forms a dough.


7.) Continue kneading till it become smooth.


8.) Spilt the dough into 4 parts.


9.) With each part, take a small piece of the dough and roll it into a ball shape. Place the rolled boba into a plate. All in all, we rolled about 100 boba. The number of boba varied with the size of the ball rolled.


10.) Sift the boba to remove the excess flour


11.) Keep the boba in an air tight container and place the container in the freezer. We can keep the boba for about 1 week.
