Today, we will be spicing a little things up! We are making a hearty, comforting bowl of Miso Udon, with various ingredients. It looks like you need a-lot of steps and work to create this wonderful bowl of Udon. Don't worry, if Ivan can do it, so can you and nothing is too difficult!

I was actually inspired by Just on cookbook (https://www.justonecookbook.com/miso-nikomi-udon/) and got to do this recipe! There's some difference in the ingredients we use and some method of cooking.
Ingredients needed to make Miso Nikomi Udon
The ingredients we need for serving of 4 are:

1.) 1500ml of Dashi Soup Based
2.) 4 Tablespoon of Miso Paste
3) 400 grams of Udon
4.) 200 grams of Swiss Brown Mushroom
5.) 100 grams of Shimeji Mushroom
6.) 600 grams of Chicken Breast
7.) 6 Tofu Puffs
8.) 1 whole Japanese Fish Cake
All the ingredients including the Miso Paste and Dashi Soup Based can be found at NTUC Finest or the Japanese Section of the supermarket, excluding the Japanese Fish Cake. You can head down to Don Don Donki to get the Japanese Fish Cake and including the Miso Paste and the Dashi.
Steps to make Miso Nikomi Udon

1.) Marinate the Chicken Breast or any other protein you have. I marinated my chicken breast with 1 tablespoon of Light Soya Sauce, and 2 tablespoon of Sesame Oil. Leave the chicken aside for about 30 minutes.

2.) Next up, we prepare the rest of the ingredients. We sliced the Japanese Fish Cake and it gave us about 18 slices in total. We cut the tofu puff into the shape of a triangle, a total of 12 triangles.

3.) We have to prepare our soup based. Let us now prepare about 1500ml of Dashi Stock, using 3 packets of the Dashi powder. We will use this as the based flavour for our soup later on.
4.) Once the Dashi Stock comes to a boil, we add in the chicken breast or any protein. Cover the pot and allow it to be cooked. Stir the soup occasionally to prevent the chicken from sticking to the bottom and the side of the pot.
5.) After 10 minutes, we add in 2 tablespoon of the Miso Paste.
6.) Allowing the Miso Paste to dissolve, we add in the Brown Mushroom and the Shimeji Mushroom. Give it a good stir.

7.) In the meantime, we have to prepare our Udon. Put the Udon, into a pot of boiling water. Cook the Udon for about 3 minutes till it become bouncy.
8.) After about 5 minutes, return to the pot soup based, and you can start adding the tofu puffs. Ensure that all the tofu puffs get soak inside the soup based.
9.) Add in the Japanese Fish Cake lastly, and cover the pot, for about 2 to 3 minutes.
10.) And you are done, it is time to assemble the Miso Udon.
